Naturopathe passionnée par l'Art culinaire, Laurence Salomon dirige depuis 8 ans les cuisines du restaurant Nature & Saveur à Annecy.
Manger n'est pas anodin car l'aliment est destiné à devenir une partie vivante de nous-même. En partant de cette évidence, Laurence Salomon a intégré l'importance du choix des ingrédients dans sa cuisine. Nous comprenons bien que ceux-ci sont moins en affinités avec nos cellules dès lors qu'ils sont traités et raffinés à outrance, transformés industriellement avec force d’additifs en tout genre. Nous savons tous que le corps humain a une grande force d'adaptation. Il arrive à trouver bon gré mal gré un certain équilibre, mais les maladies de civilisation ne sont certainement pas étrangères à ces dérives.Elle utilise donc des ingrédients biologiques sans exclure les produits fermiers locaux rigoureusement sélectionnés par ses soins.
